Vegan Chocolate Cake

The birthday celebrations are officially over. I’m now

just another 27-year-old girl trying to make it in the world.

I had a great time celebrating with friends.

We had a little gathering at the apartment. It was a fall fiesta.

It included delicious mexican dishes and lots of fall dishes. There

was beer, a piñata and friends.

I crushed that thing.

We played some games. Had some laughs.

We busted some dance moves. It was a successful birthday celebration.

Many thanks to all my friends who made it awesome.

What also made it awesome? This cake. Vegan chocolate cake.

Vegan Chocolate Cake:

1.5 cups flour

1/2 cup raw sugar

1/2 cup honey (ok this isn’t vegan. you could do a full cup of

sugar if you wanted to be a strict vegan)

1/4 cup cocoa powder (I added a little extra)

1 tsp baking soda

1/2 tsp salt

1/2 of a banana

4 tbsp vegetable oil

2 tsp vanilla

1 tsp balsamic vinegar

1 cup of water


1- pre-heat oven to 350

2- mix dry ingredients

3- add in wet ingredients. Mix it up.

4- pour into greased pan.

5- bake for 20-25 mins. I advise watching it.


Peanut Butter Frosting:

1/2 cup earth balance

1 cup natural PB

3 tbsp almond milk

2 cup powdered sugar

1- mix all ingredients together.

2- I layered the cake and frosted between the layers

and the top.
