I finished reading the best book I’ve ever read in my life.
Scott Jurek writes what could be an ordinary tale of running and life
into a story that is extraordinary. He is inspires the uninspired
to move their feet, eat healthy and find what brings them joy.
It brought me joy. It brought me happiness. It brought me a
new outlook on running and life. No- I’m not about to try ultra-marathons
but I love running and I love healthy eating. Scott is a hippie vegan
making his creepy food. And I dig it! I love creepy vegan food!
Read the book. Run a mile. Or don’t if it’s not for you. He makes
a case to find what moves you and move with it.

Anyways on to the good stuff. Today I came home a little under
the weather. Now you should know something. If we were dating-
I need one thing. One thing only when I’m sick. Get your mind
out of the gutter.

Pancakes! It’s my absolute sick comfort food. I also had no
idea how to make them vegan. But I did!

Vegan Pancakes!
.
1/4 cup almond flour
1/2 cup whole wheat flour
1 tbsp raw sugar
dash of salt
1 tsp baking powder
2/3 cup almond milk
1 flax egg (1tbsp flax + 3 tbsp water)

1- mix dry ingredients
2- add milk and flax egg
3- cook on medium heat
.
I added cinnamon, sunflower butter and berries to
top mine. And a drizzle of maple syrup.

Was dinner healthy? Heck no. But I’m sick and wanting to die
and prevented me from feeling that way while I inhaled them.
If you were my boyfriend it would keep you on my good side.
And even maybe even score you a smooch.
